Squirrel Bars (using real butter, organic peanut butter & chocolate)

These are bars of peanut-buttery-chocolaty-goodness. 

Chocolate Peanut Butter Squirrel Bars.
They have an appealing marbleized surface and stay moist and chewy for a few days. However, I like these the best when they are still warm and the chocolate is soft. You can easily reheat them a little after the first day, to enjoy that fresh-baked taste.

Try these Squirrel Bars while warm and gooey and top them with a scoop of homemade banana ice cream and hot fudge sauce!

Squirrel Bars are fun to take around as neighbor gifts or for taking to pot-lucks. Very similar to Congo Bars, they are well loved by those who try them. I love that they are easy to make too.



Your family will love Squirrel Bars!
Squirrel Bars Recipe:

1/2 c. salted organic peanut butter
1/3 c. organic butter
3/4 c. brown sugar or organic palm sugar
3/4 c. sugar or evaporated cane juice
2 large free-range eggs
2 t. real vanilla extract
1 c. organic flour
1 t. baking powder (aluminum-free)
6 ounces organic chocolate chips


Method:

Preheat the oven to 350 degrees F.
Grease a 9 X 13-inch baking pan.
In a mixing bowl, mix together the first 4 ingredients until creamy.
Add eggs and vanilla and mix in well.
Whisk together the flour and baking powder and then stir into the peanut butter mixture.
Spread mixture into the prepared pan..
Sprinkle the chocolate chips on top.
Bake 3 minutes at 350 degrees.
Take out of oven and marbleize the chocolate chips into the batter.
Return to the oven and bake for another 18 to 20 minutes.
Cool and cut into bars.
